A lot of Indian food is already gluten-free

Here is the good news if you avoid gluten: a huge amount of Indian cooking never had wheat in it. Rice, most dals, tandoori meats and the majority of curries are built without flour. What usually brings gluten to an Indian meal is the bread β€” chapatti, naan, paratha β€” and the occasional gravy thickened with wheat flour. We build a box that simply leaves those out and keeps everything that is naturally gluten-free.

That means you are not eating a shrunken β€œfree-from” version of the menu. You are eating the parts of Indian home cooking that were always this way β€” biryani built on basmati, dals, tandoori dishes and cooked-down curries.

An honest note for coeliacs

We need to be straight about cross-contamination, because it matters. Our meals are cooked in a shared kitchen that also handles wheat β€” we make breads in the same space. So while the ingredients in a gluten-free box contain no gluten, we cannot promise the zero-trace, dedicated gluten-free environment that a medically diagnosed coeliac may need.

If you have coeliac disease or a serious wheat allergy, please message us before ordering so you can decide with the full picture. We would rather lose the order than reassure you with something vague and put your health at risk.

Because so many gluten-free Indian dishes are also dairy-light or vegetarian, this box pairs naturally with other needs. It is the same kitchen, tuned to what you avoid, rather than a separate menu for every combination.

Less low-level effort during term

Managing a gluten-free diet in shared student housing is a constant background task β€” separate toasters, endless label-checking, the pasta everyone else lives on. Having a run of naturally gluten-free Indian meals in the fridge, ready to heat, takes some of that pressure off during a busy term without asking you to cook from scratch every night.

Beyond the obvious wheat

Most people know to skip the naan and chapatti. The gluten that catches you out in Indian food is subtler: asafoetida (hing), a common tempering spice, is frequently bulked out with wheat flour; some ready-made spice blends and pastes carry wheat as a filler; and a few dishes are finished with a flour-thickened gravy. It is exactly the sort of thing an ingredient list does not shout about.

When we build a gluten-free box we account for those hidden sources, not just the bread β€” choosing dishes and tempers that do not rely on wheat-carrying ingredients. The honest cross-contamination point above still stands, though: this is about the recipe, and our shared kitchen also handles wheat, so a diagnosed coeliac should talk to us before ordering.
